Surprise – "It's a Chocolate Cube!"
Last-minute office party and no time to cook? With a couple of easily available ingredients and your creativity, be the "hit" of the party with this recipe perfect for a office party or morning nosh that will impress.
Yields 6 Chocolate Cubes*
Shopping List:
- 1 package chocolate squares, or at least 24 individual chocolate squares
- (Your selection of chocolate defines your taste or depends upon availability. After Eights or Ghirardelli Squares are perfect)
- 1 jar apricot or strawberry preserves, or red current jelly
- 1 can whipped cream or Mascarpone cheese or whipped cream cheese
- 1 small container ready-to-eat chocolate or vanilla pudding
- 1 package of Pannetone (a cake-like holiday bread from Italy – specifically Milan) or substitute pound cake or other ready to eat cake as available in the bakery department of your local grocery
- 1 package fresh seasonal berries – strawberries, blueberries or raspberries
* Note: If making more than 6 Chocolate Cubes you may only need to purchase more chocolate squares depending on the size packages of the other ingredients.)
Method:
- Cut the cake into squares, the same size as the chocolate squares about ½" thick.
- In a microwave gently heat the preserves or jelly. Spread a light layer over the tops and sides of the cut cakes.
- Spread a layer of the whipped cream or the Mascarpone cheese on top of the jelly cake pieces, tops and sides only.
- Place the chocolate squares around the 4 sides of the cake pieces.
- Spoon about ½ teaspoon of the pudding into the box.
- Slice the strawberries fan-like for the final garnish.
- Place the Chocolate Cubes decoratively on a plate and enjoy.
